Quick and Easy Quesadilla Recipe

Introducing these Super-Duper, Ridiculously Easy Chicken Quesadillas! These bad boys are like a party in your mouth, packed with chicken that’s juicier than a comedy show and more veggies than a trendy salad bar. And guess what? They’re as easy to make as reheating leftovers in the microwave!

 

Preparation Time: 5 minutes (That’s less time than it takes to untangle your headphone wires!)

 

Cooking Time: 15 minutes (Long enough to tell a few chicken jokes, but not long enough for a full sitcom episode.)

 

Total Time: 20 minutes (Time flies when you’re having fun with quesadillas.)

 

 

Ingredients:

1 Herb Seasoned Roasted Chicken (aka the star of the show), shredded like a piece of gossip

6 flour tortillas (because life is too short for fewer tortillas)

1 large tomato, diced (the tomato adds the juicy drama)

1 can of black beans, drained (those beans are so rebellious, they refuse to get soggy)

1 can of sweet kernel corn, drained (the corn is so sweet, it’s basically the stand-up comedian of this dish)

2 tablespoons of taco seasoning (spicier than your uncle’s dance moves)

1 cup of shredded cheddar cheese (cheesier than a rom-com)

Oil (just enough to make things sizzle)

 

 

Instructions:

In a large bowl, gather your diced tomatoes, black beans, corn, and the ever-so-mysterious taco seasoning. Set it aside and let them mingle like a cast of characters in a telenovela.

Heat a large skillet to med-high heat and add a teensy bit of oil. Place a tortilla in the pan. This is where the magic happens. Like a magician, sprinkle some shredded cheese, approximately 1/3 cup of the veggie mix (because life’s too short for less filling), and a generous helping of shredded chicken.

Fold the tortilla like you’re folding your laundry (except this one won’t complain). Cook it on both sides until it’s as crispy and golden as an Oscar statue.

Remove your masterpiece from the pan and repeat the process with the rest of the tortillas. It’s like a quesadilla assembly line – you’re the chef, director, and star all in one!
